Lemon Quinoa
Quinoa is actually a seed, not a grain, and is packed with protein and essential amino acids.

Rinse the quinoa under cold water.

In a saucepan, bring the vegetable broth to a boil.

Add the rinsed quinoa to the saucepan and reduce the heat to low.

Cover and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.

In a separate bowl, combine the lemon juice, olive oil, salt, and black pepper.

Dice the cucumber, cherry tomatoes, red onion, and fresh parsley.

Once the quinoa is cooked, fluff it with a fork and transfer it to a large bowl.

Add the diced vegetables and the lemon dressing to the quinoa.

Toss everything together until well combined.

Let the salad rest for 5 minutes to allow the flavors to meld.
