In a pot, boil the soybeans for 5 minutes. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add corn, bell pepper, and red onion. Sauté for 5 minutes.

Add cherry tomatoes and sauté for another 2 minutes.

In a small bowl, whisk together sesame oil, rice vinegar, soy sauce, fresh ginger, garlic, salt, and black pepper.

Add the cooked soybeans and the vinaigrette to the skillet. Stir well to combine.

Remove from heat and let it rest for 5 minutes.

Garnish with fresh cilantro.
