Lentils and Couscous
Lentils are a great source of plant-based protein and are often used as a meat substitute in vegetarian and vegan dishes.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 15.

Rinse the lentils and set aside.

In a large pot, heat olive oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and sliced red bell pepper. Cook until vegetables are softened.

Add the ground cumin, ground coriander, paprika, salt, and black pepper. Stir well to combine.

Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes or until lentils are tender.

While the lentils are cooking, prepare the couscous according to package instructions.

Once the lentils are cooked, remove from heat and let them rest for 5 minutes.

Fluff the couscous with a fork and divide it among serving plates.

Spoon the lentil mixture over the couscous.

Garnish with fresh parsley and drizzle with lemon juice. Serve hot.
