In a food processor, combine rolled oats, chickpeas, carrot, onion, garlic cloves, ground cumin, paprika, salt, and black pepper. Pulse until well combined but still slightly chunky.

In a small bowl, mix flaxseed meal and water. Let it sit for 5 minutes to thicken.

Add the flaxseed mixture and breadcrumbs to the food processor. Pulse a few more times until the mixture comes together.

Shape the mixture into patties and place them on a baking sheet lined with parchment paper.

Preheat the oven to 375°F (190°C). Bake the patties for 20 minutes, flipping halfway through.

In a frying pan, heat olive oil over medium heat. Cook the patties for 3-4 minutes on each side until golden brown.

Toast the burger buns and assemble the burgers with lettuce, tomato, red onion, and the veggie oat patties.
