Acorn Squash Boats
Acorn squash is a rich source of dietary fiber and contains high levels of vitamins A and C.
This is vegan and gluten free recipe. Dish can be prepared in 65 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 15.

Preheat the oven to 400°F (200°C).

Cut the acorn squash in half lengthwise and scoop out the seeds.

Brush the inside of the squash halves with olive oil and place them cut-side down on a baking sheet.

Bake the squash in the preheated oven for 30 minutes, or until tender.

While the squash is baking, prepare the filling. Heat olive oil in a large skillet over medium heat.

Add onion, garlic, bell pepper, mushrooms, and spinach. Cook until the vegetables are tender.

In a separate saucepan, cook quinoa according to package instructions.

In a large mixing bowl, combine the cooked vegetables, cooked quinoa, dried cranberries, pecans, salt, black pepper, cayenne pepper, fresh parsley, and grated Parmesan cheese.

Remove the baked squash from the oven and flip them cut-side up.

Fill each squash half with the quinoa and vegetable mixture.

Return the stuffed squash to the oven and bake for an additional 15 minutes.

Remove from the oven and let it rest for 5 minutes before serving.

Garnish with additional parsley and Parmesan cheese if desired.
